20 Dollar Chef - Stuffed Peppers And Street Corn
Today on the 20 Dollar Chef, chorizo stuffed poblano peppers and some street corn or as known on the streets, elote. I love using poblano peppers. When you roast them they really pop with flavor. Stuffing these was a good idea. Mixing the rice, chorizo, 2 tomatoes, onion, A few garlic cloves, cotija cheese, a little sour cream and cilantro all under a blanket of more melted cheese was a good idea. It came out delicious. As a side dish I went with one of my all time favorite street food ideas, Elote! When the elote man rolls down the street You’ll see me waiving the man down. Its a simple recipe and absolutely full of flavor. These items went together well and really go far for the money.
Chorizo Stuffed Poblano:
- EVOO
- 4 small garlic cloves
- An Onion
- 4 Poblano peppers
- 1 lb. of chorizo
- 1.5 cups of cooked rice
- 2 medium tomatoes
- Chopped cilantro
- 1/3 cup of sour cream
- 1/4 cup of cotija cheese
- Salt & Pepper
- 1 cup of Jack cheese
