Tank Cooks Chili

Ingredients:
- 1 lb 90% lean ground beef or ground turkey
 - 1 can (6 oz) tomato paste
 - 1 medium yellow onion, finely chopped
 - 1 cup finely chopped bell peppers (red, green, yellow)
 - 3-4 minced garlic cloves
 - 1 can (4 oz) canned diced green chiles (hot, mild, or a mix)
 - 1 can (14.5 oz) canned fire-roasted diced tomatoes
 - 1 can (15 oz) tomato sauce 2-3 tbsp chili powder (adjust to taste)
 - 1 tsp ground cumin
 - 1 tsp dried oregano Kosher salt and black pepper to taste
 - Optional: shredded cheese, sour cream, or fresh cilantro for serving
 
Directions:
- Brown the meat and drain the excess fat.
 - Sautee the Onions and Peppers for 5 minutes.
 - Mix the onions and peppers with the meat and cook for 2-3 minutes to let the flavors bloom.
 - Add to a crockpot
 - Add Seasonings: Stir in the chili powder, ground cumin, dried oregano, salt, and pepper. Cook for another minute to let the spices bloom.
 - Incorporate Other Ingredients: Add the tomato paste, diced green chiles, fire-roasted diced tomatoes (with juice), and tomato sauce. Stir well to combine.
 - Cook for 4-5 hours on low heat
 - Serve: Ladle the chili into bowls and top with shredded cheese, sour cream, or fresh cilantro if desired. Also great on Chili Dogs.
