Gameday Chili | The College Cook
INGREDIENTS
-1 lbs lean ground beef
-1 medium onion, diced
-1 jalapeno, diced 9 (you can sub any pepper you want, feel free to mix a variety together)
-1 clove of garlic, minced
-1 12 oz can of diced tomatoes
-1/2 cup of beer
-2 cups beef brooth
-2 1/2 Tbsp chili powder
-2 teaspoon cumin
-2 teaspoon garlic powder
-1/4 teaspoon cayenne
-1 Tbsp ketchup

-1 lb lean ground beef

-1 12 oz can of diced tomatoes
-1/2 cup of beer
-2 cups beef broth
-2 1/2 Tbsp chili powder
-1 can of kidney beans, rinsed
-2 teaspoon cumin
-2 teaspoon garlic powder
-1/4 teaspoon cayenne
-1 Tbsp ketchup
-Salt & pepper to taste
-Olive oil
METHOD
-Place a large pot on medium-high heat
-Add a glug of olive oil then add diced onion and peppers of your choosing
-Sweat the onion and pepper for 5 mins or until translucent
-Add in the ground beef, spiced, garlic, and cook until browned
-Add in diced tomatoes, and rinsed beans (make sure you drain the beans in a strainer and stay them down with water before adding to the pot.)
-Add in beer, ketchup and broth and bring to simmer
-Simmer at least 35 min, 45 to an hour is ideal.
-Add more broth if chili is too thick.
