Don't Ruin Your Super Bowl Party With Boring Ass Wings This Year

The Big Game is coming up this weekend and you've taken the responsibility upon yourself to handle the wings for your party. That's a massive undertaking. I'd say that handling the wings for a Super Bowl party is roughly on par with having a child as far as responsibility is concerned. But you feel like you're up for the task. 

Obviously you could simply order the wings from somewhere. But you figure to yourself that anybody could just order wings. Plus everywhere is going to be booked with orders so you don't know what the wait time is going to end up being. And at the end of the day, you want to do it big. You want to do it right. You want to make your own and have everybody telling you how much they love to have your meat in their mouth. 

So how do you do them? You could bake the wings, which is a perfectly acceptable method of cooking. Just as long as you season the wings before throwing them in the oven. I swear to god if you are one of those pricks who just toss unseasoned wings into the oven, bake them up and drizzle a little hot sauce over them in the end, you don't deserve to have any friends and I hope you get bullied relentlessly for the rest of your life. But as long as you season the wings, baking is fine. The only thing is you might not get that desired crisp you're going for, especially if you're not using any baking powder. 

You could fry the wings, which is a perfectly acceptable method of cooking. Heat up the oil, toss those suckers in, get 'em nice and crispy. The only thing you're worried about, however, is leaving them in the frying oil for too long trying to get the meat to come up to temperature and then they end up getting overly crispy. You may think there's no such thing as overly crispy, but let me assure you that there is. You don't want to serve undercooked chicken, but you also don't want to serve wings that essentially turn into a Nature Valley granola bar. 

Well, my friends, allow me to introduce to you the smoke-a-fried method. Or, at least allow me to reintroduce this to you since I originally posted this video before last Super Bowl. But basically what you're getting here is the most flavorful, most succulent, most perfectly crisped chicken wing you could ever imagine. More or less it's like reverse searing a steak. You season the wings, you throw them in the smoker low and slow for an hour or so to get up to temperature, and then finally you pull them off the smoker and flash fry them in oil real quick to get that last bit of crisp. You get the flavor from the seasoning, the flavor from the smoke, the crisp from the oil, and then you can top them off with whatever sauce you want. Does this require maybe a little extra work? Sure. But I'm telling you that it'll all be worth it in the end when your wings are the only thing people are talking about during the game and there's not a single leftover to be seen before the first half is even finished. You'll be the hero of your Super Bowl party, and all you had to do was just not be a lazy jackass when it comes to cooking your wings. 

Rub Recipe:

  • 1/2 tbsp kosher salt
  • 1/2 tbsp onion powder
  • 3/4 tsp brown sugar
  • 3/4 tsp chili powder
  • 1/2 tsp garlic powder
  • 1/2 tsp cayenne pepper
  • 1/2 tsp black pepper
  • 1/4 tsp oregano
